You’ll never look at a turtle the same way when you’ve learnt the legend of the Cu Rua, Great Grandfather Turtle. According to folklore, the giant turtle that swims around Hanoi’s Hoan Kiem Lake is the same mythical creature that helped King Le Loi fend off the Chinese nearly six centuries ago. Whether the legend is true or not, we love the idea of bringing a little Vietnamese good luck into our kitchens.
