• Oscypek smoked cheese

    Oscypek smoked cheese is another street food lifted to the ranks of national treasure. Created only in the Tatra Mountains, Oscypek has been handmade by nomadic highlander shepherds since the 15th century. The milk is boiled in mountain huts called bacówka until it is ready to be smoked in a wooden mold. Once it is ready to eat, the cheese carted down the mountain to be sold at Stary Kleparz market.
