    Tea. Indian tea. Chai. Indians love their chai and there are street carts, roadside stands and people strolling the markets with pots ready to be poured. Behind every cup of chai, whether it be in a flimsy plastic cup, earthenware clay pot or silver kettle with little glasses, is a chai wallah. A wallah is one who makes. Chai wallahs brew their chai fresh all day long. They use tea, ginger root, cardamom, cinnamon, cloves, black pepper, and other spices. There are chai breaks all over India happening right now!
